Lapis Surabaya is one of the popular Indonesian traditional cakes. In Surabaya this cake is known as Spiku. I consider this cake as a member of Indonesian "layer" cakes family .
What is so special about this cake? It has been made of lots of Egg Yolks, has soft texture and moist.
But does not content spices like Lapis Legit which in The Netherlands is famous with name "Spekkoek".
If Lapis Legit has lots of thin layer, Lapis Surabaya has only 3 layers with chocolate in the middle.
Some people like to make variant with fruit jam & rhum in the middle or cheese creme.
Taste can be different but the traditional variant stays popular especially for people who lives far from the country of origin of this cake.
